("What a Tteok")

"밥 위에 떡"이라는 속담이 있다. 마음에 흡족하게 가졌는데도 더 주어서 그 이상 바랄 게 없다는 말이다. 이번 추석이 그랬다. 밥 위에 송편까지 먹었으니 뭘 더 바라겠는가. 그런데 송편 중에 오색 '꽃 송편'은 맛도 맛이지만 근사한 모양 때문에 한입 베어 물기도 아까웠다.
(In Korea, there is a saying "A piece of tteok-the Korean rice cake- on a bowl of boiled rice." That means, you are in happy situation in which you have something enough, so there's nothing that you want more. At Chuseok-The Korean harvest festival- of this year, it really did. A bowl of rice, and tteok on it. What else did I need more? Among Songpyeon-A kind of tteok-, not only does flower-shaped Songpyeon with five colors taste good, but also it makes a boast of its chic pattern.)

오늘은 '떡' 이야기를 해야겠다. 하지만 누워서 절로 입에 들어오는 떡은 없는 법. 그래서 한영대학 호텔조리학과 박선흠 교수님을 찾았다. "남의 떡으로 제사 지낸다"는 말이 있는데, 오늘은 교수님 덕분에 떡 맛 좀 봐야겠다.
(Today, we will talk about tteok. But there is no tteok that comes in itself into our mouth! So, we visited professor Park of Hanyeong university to find out more information about tteok. There is a saying that ancestral rites could be celebrated with tteok others made. Today, we will try the taste of tteok thanks to prof. Park.)

"나눠먹는 음식, 떡"

- 떡을 해 먹은 지는 얼마나 되었나요?
(Q. How long has tteok been eaten?)
"떡은 주재료가 곡물이니까, 원시 농경시대 때부터 해 먹었다고 할 수 있어. 그러니 수천 년의 역사를 가진 셈이지. 그런데 밥을 먼저 해 먹었을까 떡을 먼저 해 먹었을까? 생각과는 달리, 밥보다 떡을 먼저 해 먹었어. 우리나라에서는 부족국가 시대에 사용한 토기 시루가 발견되었는데, 솥이 발명되기 전에는 시루에 떡을 쪄 주식으로 먹었을 가능성이 많아. 삼국시대에 솥이 만들어지면서, 곡물을 빻아서 만들어야 하는 떡은 더욱 간편하게 만들 수 있는 밥에게 주식의 자리를 넘겨주고 제사 등 특별한 때에만 해서 나눠 먹는 '별식'이 되었던 거지."
(A. Because tteok's main ingredient is grain, it started in the Primitive Agricultural Age. So it was old history with thousands of years. By the way, which could have eaten earlier, boiled rice or tteok? Contrary to popular belief, tteok has been eaten earlier than boiled rice. Earthenware steamer which had been used in the period of tribe country was discovered in our country before Sot-Korean traditional caldron- was invented, which shows there might be a possibility that people could have eaten tteok as main food after it was cooked into earthenware steamer. However, since Sot had been invented in the period of the Three States, tteok gave its position over to boiled rice. That's because the way to make boiled rice was much easier. Since then, tteok became a special dish eaten together in special day like ancestral rites.)

- 떡이 서로 나눠 먹는 별식이 되었다고요?
(Q. Was tteok changed into a special dish eaten together?)
"그래. 우리 선조들은 자기 집 식구만을 위해 떡을 만들지 않았어. 농경 전에는 제사 음식으로 가축을 잡아 사용했지만, 농경이 시작된 뒤에는 노동력인 가축 대신에 떡을 사용하였어. 그러니 떡을 만들어 우선 천지신명과 조상님께 정성을 다해 올렸지. 그러고 나서 이웃이나 친척 간에 서로 나누어 먹었던 거야. 그러니 떡은 넉넉히 만들었겠지. 얼마나 나누어 먹는 풍습이 널리 퍼졌으면 '남의 떡에 설 쇤다'는 속담이 다 나왔을까. 배려와 인정을 중시하는 우리의 미덕이 떡을 나눠 먹는 문화에도 그대로 스미어 있었던 거지."
(A. Yes. Our ancestors didn't make tteok only for their family. Before starting agriculture ancestors used domestic animals for ancestral rites food, but after that they used tteok instead of domestic animals which helped them work on farm and field. Therefore our ancestors made tteok and offered to gods and their ancestors first, and then they ate it together with their neighbors or relatives. That's why our ancestors made tteok sufficiently. I can't believe how prevalent the custom of being shared and eaten together was, ending up creating the proverb like this, "New year's day could be celebrated with tteok others made." Our virtue which put emphasis on consideration and kindness are permeated in our culture eating together tteok.")

- 떡은 맛만 있는 게 아니라 영양가도 매우 풍부하다고 들었는데요?
(Q. I heard that tteok have not only a delicious taste but also are very nutritious.)
"전통 떡의 재료 배합을 살펴보면 떡은 영양을 고려한 음식이었음을 알 수 있어. 예전에 자주 만들어 먹던 무시루떡의 예를 들어 볼까. 이 떡의 주재료는 멥쌀인데, 멥쌀에 부족한 비타민 B₁과 단백질을 고물인 팥이 보충해 주고, 멥쌀에서는 찾기 어려운 비타민 C를 부재료인 무가 보충해 주어. 더욱이 무에 들어 있는 디아스타아제는 소화를 도와, 영양이나 소화를 모두 고려한 최상의 식품이 탄생하였지."
(A. If you examine the ingredients, you will find a mixture of traditional foods. You'll notice that tteok are considered to be very nutritious. To give you an example, there are radish steamed tteok that people often made in the past. Their main ingredients are nonglutinous rice. And red bean powder contains vitamin B₁and protein which are lacking in the nonglutinous rice. Also, radishes provide vitamin C which is difficult to find in the main ingredients. As well, diastase in radishes help digestion, so the best food considered to be both nutritious and good for digestion was born.)

- 떡은 밥 대신에 먹어도 될 만큼 몸에 좋은 음식이네요?
(Q. Is tteok as healthy a food as boiled rice?)
"그렇지. 떡은 쌀을 농축한 것이라 볼 수 있기 때문에 조금만 먹어도 속이 든든하지. 또 떡은 양에 비해 칼로리가 높으면서도 밥보다 소화가 잘 되어서 바쁜 일상에 한 끼 식사로 손색이 없어. 콩가루 인절미는 콩에 들어 있는 단백질과 지방이 찹쌀과 섞여 영양상 조화를 이루고 있지. 쑥떡은 또 어떻고. 멥쌀가루에 어린 쑥을 섞음으로써 쑥에 들어 있는 비타민A와 C가 쌀에 부족한 영양소를 보충해 주어 건강식으로 그만이야."
(A. Yes. Tteok is concentrated rice so it makes us feel full, although we do not need to eat as much. Tteok has higher calories as compared to rice however, it is more digestible than boiled rice. So, it is a good source of energy in our busy lives. Injeolmi with soybean powder, provides a balanced source of nutrition because of the protein and fat from the beans which are then mixed with glutinous rice. Mugwort tteok is nutritious, too. The vitamin A and vitamin C found in mugwort complement the nutrition lacking in rice by mixing nonglutinous rice powder with young mugwort.)

- 하지만 요즘에는 빵을 더 좋아하잖아요?
(Q. More people prefer bread recently, don't they?)
"그렇긴 해. 요즘 사람들은 빵을 더 찾는 것 같아. 우리나라 사람들의 주식은 밥, 즉 쌀로 된 음식이잖니? 그에 반해 빵은 밀로 만든 음식이고. 그래서 아침에 간단히 해결할 때나 간식거리를 찾을 때 주식의 재료가 아닌 밀로 만들어진 빵을 선택하는 것 같아."
(A. Yes, That's true. Koreans eat rice at almost every meal. So, when they want to eat conveniently or simply have a snack, they often opt for something different, like bread. Bread is made of wheat, which is not one of the ingredients of the typical Korean meal.)

- 그렇다면 빵과 떡 중 무엇이 더 좋은 음식인 걸까요?
(Q. In that case, which is better food, bread or tteok?)
"어느 음식이 더 낫다고 말할 수 없어. 서로의 장단점이 각각 있기 때문이지. 그냥 초콜릿 케이크가 먹고 싶으면 초콜릿 케이크를 먹고, 치즈 케이크를 먹고 싶으면 치즈 케이크를 먹는 것처럼, 그때그때 자기 몸이 원하는 것을 먹는 게 가장 좋지 않을까 싶어."
(A. We can't say which food is better because each has its merits and demerits. I think that it is better to eat what your body wants case by case. For example, if you want to eat chocolate cake then eat some chocolate cake. If you want to eat cheese cake then eat some cheese cake.)

- '떡집과 빵집 사이'에 우리가 서 있는 셈이군요?
(Q. We have to choose 'between tteok store and bakery', don't we?)
"그러고 보니 그러네. 그렇다고 빵집 가지 말라는 게 아니고, 떡집도 살려내자는 거야. 그 방법은 뭘까? 우리 조상님들한테서 그 길을 찾을 수 있어. 조선 시대는 농사짓는 기술과 음식을 조리하는 법이 발달하면서 식생활 문화가 크게 개선된 시기인데, 그와 함께 떡의 종류와 맛도 한층 다양해졌어. 처음에는 단순히 곡물을 쪄 익혀 만들던 것을 다른 곡물과 섞기도 하고 과일이나 꽃, 야생초나 약재 등을 더하여 빛깔이나 모양, 맛에 변화를 주었지. 이 일을 '오늘 우리의 상황'에 맞게 다시 시작하는 거야. 이게 떡을 살리는 길이지."
(A. Yes. That's true. But I don't intend not to the bakery, but to make both of them coexist. How? We can find the way from our ancestors. Joseon dynasty is the era which culture of dietary life was improved considerably as farming skills and the way people cook foods are advanced. Because of this change, kinds and flavors of tteok got diverse, too. At first, we just simply made tteoks. But in these days, tteoks are mixed with other grains, adding fruits, flowers, natural grasses and medical stuffs and so on. In result, we can make change in color, shape and flavor. Let's restart this work in accordance with today's our situation. This is the way we can revive the tteok.)

'빵셔틀'이라는 말이 있다. 빵은 아실 거고, 셔틀은 우주 왕복선. 이를테면, 100원짜리 동전을 하나 주고서 빵집 가서 5000원어치 빵을 사오라면서 "충분하지?" 하는 거다. 그러면서 빛의 속도로 다녀오라는 거다. 그러다 대꾸하면 맞는다. 사라져야 할 끔찍한 학교 폭력이다.

(There is a word, 'Bread Shuttle' youths talk as a slang nowadays. The meaning of bread, maybe you know it. And 'Shuttle' means, a space ship. For example, there are A student and B student. A forces B to buy some bread worth 5,000 won, giving 100 won. And then A pushes B to come back rapidly like a space ship. And A even says, "Is that enough, right?". In this case, B is like a 'Bread Shuttle'. If B refuses that order, A will probably beat B. It's a type of terrible school bullying that must disappear.)

어, 그러고 보니 빵셔틀은 있는데 떡셔틀은 없네. 떡셔틀이 없어서 서운하다는 게 아니라, 떡보다 빵을 좋아하는 요즘 청소년들의 일상이 이런 말에서조차 읽히는 게 안타깝다는 거다. 오늘은 떡집에 가서 떡 좀 사다 먹어야겠다. 잔칫날이라도 되는 것처럼.
(Well, come to think of it, there is no word like "Tteok Shuttle"! It doesn't mean we're dissatisfied because of that. We just feel sorry that we can see the daily life of these days' students that choose the word 'Bread Shuttle' than 'Tteok Shuttle' by preferring bread to tteok. We are going to buy some tteok to eat. As if today is a special day.)
